
While many mass-produced domestic beers claim to be pilsners, an actual pilsner has a very specific heritage. Pilsners were developed in what is now the Czech Republic, where up until the mid-1800s, most beer was brewed dark and heavy. Brewers in the city of Pilsen started using bottom-fermenting yeasts, which made for a clearer liquid.
Pilsners are known for their distinct hop flavor. Many domestic breweries market their beer as pilsner, though few of them use the traditional process, nor do they have the taste that actually defines a pilsner.
