Tuna Noodle Casserole- you will need 8 ounces of noodles, a tablespoon of butter or margarine, 4 ounces of mushrooms, a can of cream of mushroom soup, a cup of Monterey Jack cheese, 8 ounces of plain yogurt, half a cup of scallions, celery seeds, red pepper, a package of broccoli, a can of tuna, snack crackers, and parmesan cheese.

Preheat the oven to 350 degrees. Cook the noodles and set aside. Sautee the mushrooms, then add everything except the crackers and parmesan. Salt and pepper to taste, then sprinkle the top with crushed crackers and parmesan. Bake for 30 to 35 minutes. Although there are variations, tuna casseroles are the same basic design, only without the noodles.

 

Mississippi Breakfast Casserole - you'll need 4 slices of bread, 6 to 8 sausage patties, green onion, half a cup of diced tomatoes, a cup of your favorite cheese, 6 eggs, a cup of milk, salt, pepper, paprika, and Cajun seasoning (optional),

Break the bread into small pieces and place at the bottom of the dish, and then place the sausages over the bread. Sprinkle with green onion, tomatoes, and cheese. Salt and pepper. In a bowl, mix together the milk eggs and remaining seasonings. Bake for 45 minutes at 350 degrees.
