The method of double boiling involves a smaller pot of ingredients resting inside a larger pot filled with water. The larger pot of water is brought to a boil; the rising steam heats the smaller pot, thereby gently warming the ingredients inside the smaller pot.


With a double boiler it is now very easy to gently heat food. Double boilers are especially good at evenly melting chocolate. And while the name of this two piece pan is a double boiler, chocolate has a very low melting point, which means excessive heat will scorch it and ruin the flavor. So the water in the larger section of the double boiler should not get to the boiling point. Water will also ruin melting chocolate so it is essential to keep the lid off the double boiler when melting chocolate.
