Griddles are an excellent way to prepare food, and electric griddles make your food preparation a breeze. An electric griddle is primarily used on a table or countertop and has an internal electric element that is used as its heat source. Electric griddles typically have a large, flat cooking surface with a basin going all the way around in order to catch grease. The cooking surface itself is usually made from a nonstick coating material such as Teflon. Electric griddles are handy because they provide you with more cooking space than you would normally have available on your stovetop. The precise heat control on electric griddles also allows you to determine exactly how much or how little heat you want to apply to your food.

Cinnamon Griddle Cakes: you will need 1 ½ cups of flour, 3 tablespoons of sugar, half a teaspoon of salt, 4 teaspoons baking powder, 1 tablespoon of cinnamon, 2 eggs, a cup of milk, 2 tablespoons of corn syrup, 1/4 cup of butter, and a tablespoon of vanilla. Combine the flour, sugar, salt, cinnamon, and baking powder in a bowl. In a separate bowl mix the eggs, milk, corn syrup, butter, and vanilla, then stir in the flour mixture. Turn the electric griddle to medium heat. Spoon 1/4 cup of the mixture for each cake. Brown on both sides. Enjoy!

 

Griddle Scones: for this recipe you'll need 4 cups of flour, 3/4 teaspoon of baking soda, a tablespoon of sugar, 1/2 teaspoon of salt, 1/2 cup of shortening or lard, a tablespoon of corn syrup, and 1 1/2 cups of buttermilk. Mix the salt, sugar, baking soda, and flour together in a large bowl. Add the shortening in small pieces. Create a hole or well in the center of the mixture and pour in the buttermilk and corn syrup. Use a spoon to stir it into a soft dough. Cut the dough in half and pat it into approximately inch-thick circles over flour then cut each circle into six wedges. Spray the electric griddle with cooking spray and turn to medium heat. Cook scones on each side until done and then cook both edges. Allow the scones to cool on a wire rack before serving.
