
Frying pans can be made of several different materials, including: aluminum, cast iron, copper, and stainless steel. Aluminum is generally the least expensive and lightest, but adversely reacts to some acidic foods and may change the taste. Cast iron frying pans are heavy-duty and with some basic care can last generations. Soap should never be used on cast iron and they should be dried with a paper towel to eliminate rust.
Copper is an excellent conductor of heat, but reacts with some foods; it should not be used to cook on directly. Copper is used as an exterior lining or as an inner core. Stainless steel makes a beautiful and more expensive frying pan. It is generally regarded as the best for conducting heat safely and evenly.
