
A griddle is a flat piece of metal with a small lip around the perimeter, providing maximum surface area for pancakes, French toast, and sandwiches. Griddles can be round, square, or rectangular. A griddle may come with a single handle for use on the stove top. Electric griddles are generally supported by four legs.
Cast iron griddles are the most traditional griddles. Cast iron griddles are excellent to cook with and, if seasoned correctly, are non-stick.
Teflon coated griddles are the next best thing to cast iron, but are much lighter and are usually easier to clean.
Electric griddles are usually coated in Teflon and provide an even, regulated temperature. The nice thing about electric griddles is the stove top is available for other uses.
