With the invention of the poacher, poaching eggs has never been easier. Previously eggs were poached by cracking an egg into a pot of boiling water then removed with a slotted spoon. While effective, it took great skill to ensure the poached eggs were beautiful.
Poachers allow poached eggs to be attractive and tasty. With a poacher, everything from a simply prepared poached egg to extravagant eggs benedict will come out perfect.
A poacher is basically a lidded pot with small inserts for individual cracked eggs. It uses the same principle as a double boiler. Water is boiled in the pot below the egg inserts. The eggs are gently poached from the heat of the water. Many of the newer poachers include Teflon coated inserts for easy egg removal.
