Pressure cookers truly are a fast and delicious method of preparing food. Today there are a number of pressure cookers on the market. Pressure cookers are great for all kinds of foods. Below are a few pressure cooker recipes that just might get your creative juices flowing.
Wild Rice Pilaf: that's right. Pressure cookers aren't just for meat products. This delectable recipe calls for a cup and a half of wild rice, six cups of water or chicken stock, a cup of white rice, a pound of bacon (mmm…bacon), two onions, two cups of celery, three-fourths of a cup of parsley, a cup or toasted pine nuts, and salt and pepper to taste. Place the rice and half the water or chicken stock and boil. Bring to about 15 pounds of pressure, reduce the heat, and cook for 15 minutes. Remove the wild rice and repeat the process with the wild rice, then mix the rices together. Fry the bacon in a pan, then cut into small pieces and remove. Then fry the onions and celery. Add the rest of the ingredients to the rice and serve.
Raspberry Chicken: for this amazing recipe you'll need a half a cup of red wine, half a cup of vinegar, up to one cup of raspberry jam, two tablespoons of soy sauce, two to three tablespoons of honey, a teaspoon of Dijon mustard, a clove of garlic, skinned chicken cut into pieces, and orange zest for garnish. Mix together all the ingredients except for the chicken and orange zest. Use the mixture as a marinade for the chicken. Marinade for up to four hours. Then place the chicken in the pressure cooker and set it to boil. Bring the pressure up to about 15 pounds, and then reduce the heat. Cook the chicken for about 12 minutes.
