
Roasting pans are ideal for preparing roasts, turkeys, chickens, and more. The high sides of a roasting pan ensure the meat is kept safely inside as well as offering room for other items. A roasting rack is shaped to fit inside a roasting pan, the grates of a roasting rack allow juices and fat to collect at the bottom of the roasting pan.
Because the fat is collected in the roasting pan, using a roasting rack ensures healthier cooking. Some roasting pans are now given a Teflon coating, but stainless steel or other metal makes preparing gravy in the roasting pan much easier. After the meat is taken out, fat can be removed, and the roasting pan can then be deglazed. This process adds wine, stock, or water to make a savory sauce of the remaining liquid from the meat.
