Using a roasting rack inside a roasting pan is the ideal way to prepare roasts, turkeys, chickens, and more. A roasting rack is shaped to fit inside a roasting pan. The grates of a roasting rack allow juices and fat to collect at the bottom of a roasting pan. This keeps the roast or bird from sitting in the fat and allows the heated air to circulate. A roasting rack also makes removing the meat easier and after the fat is removed from the roasting pan, the juices can be used for savory gravy.


Because the fat is collected in the roasting pan, using a roasting rack ensures healthier cooking. Some roasting racks are now given a Teflon coating, but often they are stainless steel or other metal.
