
Saute pans are engineered to efficiently brown and cook meats and a variety of other foods. Saute pans are wide with straight sides like frying pans, but saute pans are generally higher. The long handle on saute pans is often accompanied by a loop handle, if the saute pan is heavy.
Saute pans are most often made of stainless steel, enameled cast iron, aluminum, anodized aluminum or lined with copper. Generally, the old axiom, you get what you pay for, is true when purchasing saute pans. Look for saute pan that is well balanced.
Though some saute pans may be coated in Teflon, if the saute pan is used for sauteing, Teflon is not recommended. To saute is to cook food quickly in a small amount of oil in saute pan over direct heat. The flavor of the meat or vegetables is reduced by the Teflon coating.
