
Skillets are made of many different materials, including: aluminum, cast iron, copper, and stainless steel. Aluminum is generally the lightest and least expensive, but adversely reacts to some acidic foods and may change the taste. Cast iron skillets are heavy-duty and with some basic care can last generations.
Soap should not be used on cast iron and they should be dried with a paper towel or in the oven to eliminate rust. Copper is used as an exterior lining or as an inner core as it reacts with some foods and should not be used to cook on directly. Stainless steel makes a beautiful and more expensive skillet. It is generally regarded as the best for conducting heat safely and evenly.
