Plastic – Plastic cutting boards are cheap and versatile. They come in a variety of sizes, and can be easily stored. Plastic cutting boards were originally billed as a safer alternative to wood cutting boards. The argument is that plastic cutting boards are safer than wood cutting boards because they harbor less bacteria, such as salmonella. However, there has recently been evidence to show that they are not safer, and a definite answer to the safety question has not been proven.

 

Wood – Wood cutting boards, also called butcher block cutting boards, are very aesthetically pleasing. A wood cutting board is also much easier on a good knife blade than any other type of cutting board. It has commonly been believed that wood cutting boards hold bacteria that can cause food poisoning. However, recently there has been much debate about whether this is actually true. Regardless, it is important to properly clean your wood cutting boards with hot, soapy water, immediately after use. It is also a good idea to designate one board for cutting meat and fish.

 

Glass – Glass cutting boards are also a good alternative to wood if you are trying to avoid any chance of food poisoning. Unlike wood, or even plastic, glass is not porous, and won't collect bacteria. It is also harder to slice through or chip. As a result, however, it is very hard on knife blades. If you are using a glass cutting board regularly, be sure to sharpen your knives after each use to prevent excessive dulling. Some people like to have a glass cutting board that they exclusively use for meat and fish, and a wood or plastic cutting board for vegetables, fruits, and breads.

 

Corian – Corian is a name brand material made by the DuPont Company. It can be purchased for cutting boards, or countertops. Corian is made from a combination of natural minerals and acrylic resin. As a result, Corian has no pores, and thus resists bacteria build-up. It is also quite stain resistant, and resists chipping and slicing nicely. Having a Corian countertop installed means you can slice directly on any portion of your counter. Any stains or slices can be buffed out with sandpaper.
