Our special beef and broccoli stir fry is the king of all electric skillet recipes
Electric skillets are among the most useful appliances you'll have in your kitchen. An electric skillet can almost be an oven replacement device, cooking healthy, simple meals with minimal stress or cleanup. But you can't get the best use out of your electric skillet unless you've got a few electric skillet recipes. We dug through kitchen drawers full of cookbooks and hastily scrawled notecards in search of the best electric skillet recipes.
Our Stir-Fry
If you've just purchased an electric skillet, consider it an opportunity to eat healthy and well-prepared meals. Stir-frys are healthy and simple meals well suited for electric skillets, so we felt any list of electric skillet recipes should begin with a stir-fry - in this case, a beef and broccoli stir-fry.
What you need:
1/2 or 3/4 pounds of beef
If you have a rice cooker, you may also want to prepare some rice as a side dish.
For the beef marinade:
1 clove of minced garlic
A dash of ground ginger (a "dash" is a precise kitchen measurement term referring to the amount of any food item that can be eaten by your cat in the amount of time it takes for you to "dash" across the kitchen)
2 tablespoons of soy sauce (one of these is for the marinade)
3 tablespoons of dry sherry (ditto the soy sauce; the third tablespoon is for you, or perhaps the cat)
And for the vegetables and finishing sauce:
1/2 cup of beef broth
1 1/2 teaspoons of cornstarch
1/4 teaspoon of sugar
A dash of salt
2 tablespoons of sesame or peanut oil
3/4 cup of broccoli flowerettes
1 to 2 medium carrots, bias sliced ("bias" means cut diagonally, not carrots cut while watching FOX News)
1/2 onion sliced in thin wedges
And since you're looking for electric skillet recipes after all, you will need an electric skillet.
What to do:
Begin by having a brief moral quandary about the value of eating meat versus vegetarianism. Make this go away by having that extra dash of sherry.
Now cut the beef into thin slices and put it in a bowl. Add the marinade ingredients to the bowl (remember, only 1 tablespoon of soy sauce and sherry) and stir this around so the beef is coated. Let this marinate for a half hour. While you wait, we recommend reading more electric skillet recipes in case this one is a disaster.
In a separate bowl, combine the broth, cornstarch, sugar, and salt with the extra tablespoon of soy sauce and sherry. Meanwhile, set the temperature on your electric skillet to 350 degrees. Once it's heated, add the sesame or peanut oil and heat for another minute.
Now drain the meat and add it to the skillet. Stir fry until it's done (about 7 to 10 minutes) and then remove the meat and keep it warm.
Now put the vegetables in the skillet and cook them until they're tender (about 3 minutes). Reduce the skillet temperature to 250 degrees and put the meat back in with the vegetables. Add the broth mixture from the separate bowl. When the broth thickens, you're done.
