A boning knife is one of the most useful knives in the kitchen. Perfect for removing meat from the bone of a chicken, or filleting fish, a boning knife is crafted to slice next to the bone. The blade of a boning knife can be flexible to run up against the bone, while its shape is ideal for utility work such as trimming fat and portioning.


A good boning knife should be of high-quality and kept sharpened. A dull boning knife can cause serious injury to the user and make de-boning meat difficult. A good boning knife should also have a handle that is easy to grip with an overall smoothness for easy cleaning. There should be no crevices to harbor any bacteria. The blade itself should be cleaned by hand and sharpened or honed before each use.
