Ultra sharp and stays that way
Ceramic knives have ultra sharp blades, and reviewers are very positive on their ability to keep a sharp edge for much longer than traditional stainless steel kitchen knives—without sharpening. Ceramic kitchen knives are also generally lightweight, easy to use and have a wide selection of styles.
High-tech ceramic
Ceramic knives stay sharp so long because they are made of an advanced, high-tech ceramic called zirconia. This material, which is second in hardness only to diamond, was originally developed for industrial use.
Benefits of Ceramic
Kitchen knives made out of this high-tech ceramic material cut with precision and accuracy every time and maintain their razor-sharp edge for years. Plus they are lightweight and evenly balanced, stain and rust proof and will never discolor. Because the knives aren't made of metal, foods won't take on a metallic taste or smell. Ceramic kitchen knives offer several benefits to the chef, including:
Ultra sharp long life blade
Stain and rust proof
Easy to clean
Lightweight and easy to use
Great selection
They may be the new kids on the block, but ceramic kitchen knives offer a great selection of styles. Kyocera is the leading ceramic knife manufacturer in the world today. They offer the best overall selection of ceramic knives on the market. Choose between ergonomic and classic wood handles, or go with a complete ceramic kitchen knife set. Add these popular ceramic kitchen knife styles to your collection:
Utility
Paring
Bread
Chef's kitchen
Fruit
Julienne
The downside
The downside to the ceramic kitchen knife is that the blades are somewhat fragile and do chip occasionally. Because of this, some people don't recommend ceramic kitchen knives for every day general use in the kitchen
Also, you can't sharpen these kitchen knives at home. Most people, including professional sharpeners, don't have the equipment or fine diamond abrasives required to sharpen ceramic kitchen knives. So if you chip your knife on a hard cutting board the first time out, you may have to live with it awhile. However, there are options. If you do chip your ceramic knife, some companies, including Kyocera, offer a sharpening service by mail for a small fee.
