Carving knives are usually anywhere from 8 to 15 inches in length. They are used to carve poultry, beef, hams, duck and other large cooked meats. Some have hollow recesses, called granton, or hollow edges, which allow for thin slices of meat. Carving knives have an extremely thin blade (much thinner than a chef's knife), and are shorter and wider than meat slicers.
Carving forks vary in size as well and are usually paired with a carving knife that is anywhere from 1 to 3 inches longer than the fork. Carving forks contain two prongs and hold meat steady while it is being carved.
Why You Need Them
There are a number of reasons why owning a carving knife and fork set is a wise, yet practical, idea. Here are a few reasons why we think they're great.

Carving sets don't have to be expensive. You can spend the big bucks if you want to, but you can also find reasonably priced carving knives and forks online. Look for discounts at local specialty stores as well.
A carving set will boost your self esteem. We're only half joking here. But if you truly want to learn to carve that turkey at Thanksgiving while everyone is watching, you'll need to know that you are using the right tools. Don't settle for a chef's knife and a kitchen fork!
